Cucumber Tomato Salad with Maple Vinaigrette
Ingredients
For the salad
- 1 Medium red onion, cut into narrow strips
- 2 Large English cucumbers, cut into half moons
- 1 lb Mix of grape tomatoes and yellow tomatoes, halved
- 10 Large basil leaves, chiffonade (cut into long, thin slices)
- 1 cup Black olives, drained
- 1/2 cup Fresh mozzarella, cubed
For the dressing
- 1/4 cup Extra-virgin olive oil
- 1/4 cup Fuller's Pure Maple Syrup
- 2 tbsp Apple cider vinegar
- 2 tbsp Freshly squeezed lemon juice
- 1/2 tsp Salt
- 1/4 tsp Pepper
Preparation
- In a large bowl add the onion, English cucumbers, tomatoes, basil, olives and fresh mozzarella. In a separate bowl, whisk salad dressing ingredients. When ready to serve, pour salad dressing over salad mix and toss. Serve and enjoy!
