Maple Pumpkin Bars
Ingredients
- 1 ½ cups Old-Fashioned Rolled Oats
- 1 cup All-Purpose Flour
- 1 cup Pumpkin Puree
- ½ cup Packed Brown Sugar
- ½ cup Fuller’s Sugarhouse Pure Maple Syrup
- ¼ cup Coconut Oil, melted
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1 ½ tsp Pumpkin Pie Spice
- ½ tsp Salt
- ½ cup Chocolate Chips (optional)
Preparation
- Preheat your oven to 350°F (175°C) then lightly grease a 8x8 baking pan and line it with parchment paper.
- In a large mixing bowl, add the old-fashioned rolled oats, all-purpose flour, brown sugar, baking soda, pumpkin pie spice, and salt. Use a whisk to combine.
- In a separate bowl, combine the pumpkin puree, maple syrup, melted coconut oil, large eggs, and vanilla extract. Whisk these ingredients together until they are smooth and uniform in color.
- Pour the wet pumpkin mixture into the large bowl containing the dry ingredients. Using a rubber spatula or wooden spoon, gently fold the ingredients together with the chocolate chips until they are just mixed, there will still be some lumps.
- Pour the finished batter into your prepared baking pan. Use the back of your spatula to gently spread the batter into an even layer. Place the pan on the center rack of your preheated oven and bake for 30 to 35 minutes. The bars are done when the edges are lightly golden brown and a toothpick inserted comes out clean.
- Remove the pan from the oven and place it on a wire cooling rack and cool completely before cutting into squares.
