Maple Syrup Cake
Ingredients
Cake
- ½ cup shortening
- ½ cup Fuller’s Sugarhouse pure maple sugar
- ½ cup Fuller’s Sugarhouse pure maple syrup
- 1 tsp vanilla
- 2 eggs, well beaten
- 1 ¾ cups cake flour
- 1 tsp salt
- 2 ½ tsp baking powder
- ¼ cup milk
- ½ cup chopped nuts (butternuts preferred)
Frosting
- ½ cup Fuller’s Sugarhouse pure maple syrup
- 2 cups Confectioner’s sugar
- 1 tbsp butter
Preparation
- Preheat your oven to 375°F and grease a 9 inch square baking tin.
- Cream shortening; add in the sugar gradually and cream well together.
- Add maple syrup a small amount at a time, beating well after each addition.
- Add vanilla and eggs, and beat the mixture vigorously.
- Sift the flour, salt and baking powder and add to the mixture alternately with the milk. Mix only enough to blend the flour.
- Stir in the chopped nuts and pour into prepared pan. Bake for suggested time.
- For the frosting, Bring syrup to boil for 1 minute.
- Remove from heat and stir in butter; add sugar and continue cooling until consistency is right for spreading. Frosting thickens as syrup cools.
