Maple Roasted Peach & Yogurt Popsicles
Ingredients
For the Peaches

3 Large Ripe Peaches, halved and pit removed

2 T. Fuller’s Sugarhouse Pure Maple Sugar or Syrup

For Dusting Cinnamon
For the Yogurt

2 C. Plain Greek Yogurt
-
2 T. Fuller’s Sugarhouse Pure Maple Sugar or Syrup

Optional Toasted Oats or Nuts
Preparation
- Preheat the oven to 400º F.
- Place the peaches on a parchment lined baking sheet and sprinkle with maple sugar (or syrup) and cinnamon.
- Roast for 30 minutes. Let cool, then pulse in a blender until completely smooth.
- In a bowl, stir together yogurt with the maple sugar (or syrup). Stir in toasted oats or nuts, optional.
- Begin by filling 6 popsicle molds halfway with the peach puree. Freeze for an hour, or until set enough to keep the peaches and yogurt separate.
- Top the peach puree with the yogurt and add the popsicle sticks. Freeze until hardened all the way through, about 6-8 hours.
